Tastes of the Tuscan region.  This morning Chris and I visited a local vineyard and were given a personal tour of how each of their wines are made and given an extensive tasting.  Claudio of San Vittorio wines showed us the different processes that are used to create their white, rose, red and sweet wines.  Some twenty kinds of grapes, but harvested at different times, concentrated at different times and different places (some need more constant temperatures, others need fluctuating), in different kinds of wood casks, duration of ageing and most importantly percentages of each type of grapes used.  We tried 9 different wines. 2 white, 1 rose, 4 reds, 2 sweet.  Our favorites was a deep red, that was 60% of one type and 40% of a mix. We also liked one of the sweet wines, a white that tasted like a mix of granny smith apple and pear.  They also produce olive oil here.  

We finished the day with a homemade meal of proscuitto and melon, spaghetti carbonara and some of our new favorite red wine. ;)
